Delicate hints of cinnamon, clove, and cedar, dance from the glass, a nod to the well-integrated oak. The flavors unfurl with juicy red cherry and pomegranate, alongside hints of orange pekoe tea, hibiscus flower, and pink peppercorn.\u201d<\/p>\n<p style=\"text-align: center;\"><a href=\"http:\/\/powertasting.com\/wp-content\/uploads\/2023\/12\/wine_tasting.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2551 aligncenter\" src=\"http:\/\/powertasting.com\/wp-content\/uploads\/2023\/12\/wine_tasting-300x157.jpg\" alt=\"\" width=\"564\" height=\"295\" srcset=\"https:\/\/powertasting.com\/wp-content\/uploads\/2023\/12\/wine_tasting-300x157.jpg 300w, https:\/\/powertasting.com\/wp-content\/uploads\/2023\/12\/wine_tasting-768x401.jpg 768w, https:\/\/powertasting.com\/wp-content\/uploads\/2023\/12\/wine_tasting-1024x535.jpg 1024w, https:\/\/powertasting.com\/wp-content\/uploads\/2023\/12\/wine_tasting.jpg 1189w\" sizes=\"(max-width: 564px) 100vw, 564px\" \/><\/a><\/p>\n<p style=\"text-align: center;\"><em>Photo courtesy of the Wine &amp; Spirit Education Trust.<\/em><\/p>\n<p>We\u2019ve drunk that wine many times, and to be honest, never once gave a thought to baking spice, pomegranate or pink peppercorns.\u00a0 In fact, we don\u2019t believe we\u2019ve ever thought of pink peppercorn after tasting <em>any<\/em> wine.<\/p>\n<p>So we suggest that when you\u2019re out winetasting and the server mentions road tar and alfalfa, take it with a bit of\u2026well, salt would be bad idea, but don\u2019t worry if you can\u2019t recognize anything you were told.\u00a0 Which is not to say that you shouldn\u2019t consider the aromas and tastes that come from your glass.<\/p>\n<ul>\n<li><strong><em>Remember, it\u2019s your mouth<\/em><\/strong>. You can\u2019t be wrong.\u00a0 Actually, you can if you\u2019re tasting some of the flavors only found in red wines when you\u2019re sipping a white, or vice-versa.\u00a0 So if you think you\u2019re tasting, say, dark fruits or tobacco in a Sauvignon Blanc, you either have a cold or you\u2019re really off base.\u00a0 But if you close your eyes and let smell and taste memories take over, you\u2019ll be correct, on your own terms.<\/li>\n<li><strong><em>Listen to others<\/em><\/strong>. Of course, other people around you have their own memories.\u00a0 If you\u2019re tasting cherries and someone else says raspberries, they\u2019re both red fruit, so maybe you\u2019ll get a hint of raspberries, too.\u00a0 But what if he says he can detect green peppers.\u00a0 That\u2019s often a sign of underripe grapes and you may not have picked up on that taste, but immediately recognize it when it\u2019s pointed out to you.<\/li>\n<li>In addition, <strong><em>what you\u2019re tasting is influenced by many factors<\/em><\/strong> besides the wine. You will taste different things when you\u2019re pairing a wine with a meal than you do in a tasting room.\u00a0 Your mood will affect your tasting abilities.\u00a0 So will your health.\u00a0 Fatigue, time of day, and the perfume some thoughtless visitor is wearing at the next table all have an effect.<\/li>\n<li><strong><em>Not everyone can taste everything<\/em><\/strong>. It\u2019s just a biological fact that some people have taste receptors for certain chemicals in specific wines and others don\u2019t.\u00a0 It is often written that Syrah has a definite taste of white pepper.\u00a0 That may be so, but not for us.\u00a0 It seems that a chemical called rotundone is found in white pepper and in low concentrations in Syrah grapes.\u00a0 If you don\u2019t have the capability to taste just a bit of rotundone, you won\u2019t find it in your wine glass.<\/li>\n<li><strong><em>Don\u2019t fake it<\/em><\/strong>. If the \u201cofficial\u201d description says a wine tastes of honeysuckle and you can\u2019t find that, but do taste pineapple, stick by your guns.\u00a0 Maybe honeysuckle was dominant at the time the description was written but it has faded now, with pineapple coming out as the wine aged.\u00a0 There\u2019s no sense convincing yourself that you taste something you don\u2019t, just to get along by going along.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The tasting notes for one of our favorite Pinot Noirs describe what\u2019s in the bottle as: \u201cSubtle and nuanced, this wine unfolds with layers of perfumed red berries and sweet baking spice.
